2022 Food Box #19 - Roasted Delicata Squash

First, cutting up the Delicata squash. Because you can eat the skin, there’s no need to peel it before you chop it. Just wash it well. Start by slicing it in half lengthwise. Then, use a spoon to scoop out the seeds and the stringy flesh. Finally, cut the seeded squash halves into thick slices.

Next, season it. Drizzle the chopped squash with olive oil, and season it with salt and pepper. Toss to coat, and spread it in a single layer on a baking sheet. Finally, bake! Bake the squash at 425° for 20-25 minutes, until the squash is completely tender and golden brown and caramelized. This dish makes great finger food. It is super sweet. Enjoy!
