2022 Foodbox #16 - John's Recipe for Cooking Fresh Sweet Corn on the Cob


This is an image of our Bicolour corn, Montauk. Our crop isn't ripe yet. For now, our corn is Honey Select. Both varieties are super sweet and available through Vesey's Seeds.


Ingredients: Fresh picked Corn. The fresher the better!


Directions:

1. Shuck corn, removing all husks and silk.

2. Fill a large pot with water and bring to a boil.

3. Place ears of corn into boiling water. Cover pot, turn off the heat.

4. Let the corn cook in the hot water until tender, usually 10 minutes.


Some suggest adding white sugar and lemon juice. We don't. If the corn is fresh, it doesn't need it.

Also, it's good to cook all the corn, even if you know you can't eat it all at that meal.

Using a sharp knife, cut the kernels off the left over ears and store in the refrigerator.

This is so good, just warmed up. Much better than cooking corn that is a few days older.
