Hakurei Turnip Salad Recipe


Ingredients 1 bunch of hakurei turnips with greens (5 or 6 turnips) 1 bunch of salanova lettuce mix 1/4 cup chopped pecans/walnuts and/or sunflower seeds (optional) 2 Tablespoons balsamic vinegar 1 Tablespoon honey 1 Tablespoon dijon mustard 1 Tablespoon olive oil

Directions

  • Rinse and chop into salad-sized pieces the greens from one bunch of turnips.

  • Put the greens from the turnips and the salanova lettuce mix in a salad bowl.

  • Wash as many turnips as you think you’d like to eat. Cut the ends off the top and bottom of the white part of the turnip.

  • Cut each turnip in half and slice thinly.

  • Add the white turnips to the salad bowl.

  • In a separate small bowl, mix together the vinegar, honey, olive oil and mustard.

  • Then pour over the salad, and toss the salad to coat all the greens. Top with walnuts, pecans and/or sunflower seeds.

*** Get creative and feel free to add additional toppings/put your own spin on the salad recipe! For example you can add sliced hardboiled eggs as a topping for some additional protein!
